Falooda is a layered dessert drink popular across India, Pakistan and parts of the Middle East, inspired by the Persian dessert faloodeh. Over time it evolved into a rich summer beverage combining chilled milk, rose syrup, basil seeds and vermicelli, often topped with ice cream and nuts. The ingredients are traditionally known for their cooling properties, which is why falooda is widely enjoyed during hot weather. Today it is commonly served in dessert cafés and street stalls across cities.
2 cups chilled milk 2 tbsp rose syrup 2 tbsp soaked basil seeds (sabja) ½ cup cooked falooda vermicelli 1 scoop vanilla ice cream Chopped nuts for garnish
Soak basil seeds in water for about 10 minutes and cook falooda vermicelli until soft then cool completely.
Pour rose syrup into a tall glass and add soaked basil seeds followed by vermicelli.
Slowly pour chilled milk over the layers and stir lightly.
Top with vanilla ice cream and chopped nuts before serving.
