A staple ingredient in Asian cuisine, rice noodles need specific expertise to cook them. These noodles need various cooking methods. However, with a few handy tips, you can ace the process.
250g chopped meat ¼ cup soy sauce ¼ cup rice wine 1 tsp white pepper powder 1 tsp Chinese five spice 1 tsp corn starch 4 dried Chinese black mushrooms 1 pack of rice vermicelli 2 large eggs ¼ tbsp of chopped garlic cloves 1 tbsp dried shrimp 1 chopped carrot 1 chopped onion 1 cup bean sprouts 1 chopped napa cabbage Salt as needed Cilantro, as needed Oil for cooking
Place the meat into a mixing bowl and pour in soy sauce and rice wine. Sprinkle white pepper, five spices, and cornstarch. Mix well and set aside.
Soak the mushrooms in a bowl of cold water, and cut off the stems of the mushrooms. Slice the mushrooms thinly.
Soak the rice vermicelli in a separate bowl for 10 minutes. Set the noodles aside.
Heat oil in a wok, pour in the eggs, cook until firm, and flip once until they are cooked. Remove egg and allow to cool. Then thinly slice on a plate.
Stir in garlic and dried shrimp and cook until the shrimp becomes fragrant. Add in the meat and cook for about 4 minutes.
Stir in onions and carrots, and cook until the carrots begin to soften for about 3 minutes. Add beans, napa cabbage, and sliced mushrooms.
Cook and stir. Transfer to a bowl. Heat remaining oil in the wok. Stir and drain the noodles.
Cook and stir for a few minutes. Scrape the mixture into a serving bowl and garnish with cilantro.
