The winter season is all about hiding under a blanket and wrapping your hands around a warm bowl of soup. To make a healthy bowl, try this mushroom recipe that is super easy to prepare.
1 tablespoon olive oil 1 onion 2 cloves of garlic 500g mushrooms 4 cups vegetable broth 1/2 cup milk 1/4 teaspoon dried thyme Salt and pepper to taste Chopped parsley for garnish
Heat the olive oil and saute the chopped onion. Stir in garlic and cook till fragrant.
Slice mushrooms and cook till they start to brown. Pour vegetable broth and bring it to a boil.
Add dried thyme, salt, and pepper. Simmer till the flavours meld.
Stir in milk and simmer for a few more minutes. Blend if you want a creamier soup.
Pour the soup into bowls, garnish with chopped parsley, and serve.
