A hot bowl of lemon coriander soup is the perfect remedy for damp and chilly monsoon weather. This clear vegetable broth is packed with Vitamin C from freshly squeezed lemon juice and the bright, earthy flavour of fresh coriander leaves. Finely chopped vegetables like carrots and cabbage add a satisfying crunch to the light broth. It is a soothing and hydrating bowl that helps clear the sinuses and warm the body.
1/4 cup finely chopped cabbage 1/4 cup finely chopped carrots 1 tablespoon finely chopped garlic 1 tablespoon finely chopped ginger 2 green chillies, slit lengthwise 4 cups vegetable broth or water 3 tablespoons fresh lemon juice 1/2 cup fresh coriander leaves, finely chopped 1 tablespoon oil Salt and black pepper to taste
Heat the oil in a deep pot over medium heat and saute the finely chopped garlic, ginger, and slit green chillies for one minute until fragrant.
Add the chopped cabbage and carrots to the pot and stir fry on high heat for two minutes so the vegetables retain their crunch.
Pour in the vegetable broth or water, season with salt and pepper, and bring the soup to a rolling boil for five minutes.
Turn off the heat, stir in the fresh lemon juice and chopped coriander leaves, and serve immediately in deep bowls while piping hot.
