Loaded with julienned vegetables and protein, rice paper rolls are a reliable, low-calorie snack to dip into a spicy peanut sauce. Swap the filling ingredients with any of choice like glass noodles, grilled chicken or even marinated tofu for different flavours or variations.
5-6 rice paper sheets ¼ cup red cabbage, shredded ¼ cup cucumber, sliced thinly 8-10 prawns ¼ cup spring onion, sliced 1 teaspoon soy sauce 1 teaspoon sesame oil Salt and pepper, to taste
Poach the prawns in hot water for 10-12 minutes before draining and seasoning with salt and pepper.
Dampen the rice paper sheets briefly in some water before layering it with some red cabbage, cucumber, cooked prawns and spring onion.
Drizzle some soy sauce and sesame oil over the ingredients; bring together two ends of the rice paper to the middle and repeat the same for the remaining two ends.
Flip it to ensure the seam side faces downwards before slicing it into two or three pieces.
Serve cold or at room temperature with a spicy dipping sauce.
