You have tried Punjabi, Sindhi, and Rajasthani kadhi, it is time to dive into the coconut kadhi recipe. It is tangy, creamy, subtly sweet, and tastes amazing when paired with steamed rice. Here is how you can make it at home.
1 cup coconut milk ½ cup besan ½ tsp turmeric 1 tsp red chilli powder ½ cup coconut yoghurt 1 tbsp kokum juice 1 tsp mustard seeds A pinch of hing 2 green chillies 7-8 curry leaves
Whisk besan with yoghurt and spices to prepare a lump-free mixture.
Heat oil in a kadhai, hing, curry leaves, and add mustard seeds, whole chillies in it.
Add besan mixture into the kadhai and pour coconut milk.
Let the ingredients cook until the concoction comes to a boil.
Add kokum juice or paste and let the mixture thicken a bit.
Garnish with coriander leaves and serve it hot with steamed rice.
