When the evening hunger strikes, these no-sugar coconut date bites can be the perfect rescue. Naturally sweet and filled with the goodness of nuts, these coconut date ladoo are a quick, grab-and-go snack that keeps you nourished and also filled for a longer time.
1 cup soft seedless dates ½ cup desiccated coconut ½ cup almonds ¼ cup cashews 1 tbsp chia seeds 1 tbsp sesame seeds ½ tsp cardamom powder 1 tsp coconut oil, optional 2 tbsp desiccated coconut, for coating
Dry-roast almonds, cashews and sesame seeds individually. Let everything cool down thoroughly before blending them.
In a blender, add roasted nuts, chia seeds and coconut. Grind them until you get a fine powder, but still have a slight texture.
To the mixture, now add the soft dates and cardamom powder. Grind them once again until the dates bind everything in a sticky mixture.
Take small amounts of the mixture and roll them between your palms to shape them into a small, bite-sized ladoo.
Roll each ladoo in desiccated coconut and coat them evenly. Keep them to rest so that they firm up a bit, then store in an airtight jar.
