Don’t you love dunking something crunchy in your hot cup of tea or coffee? Well, instead of getting the palm oil and preservative-laden biscuit packs, make coconut butter cookies with this easy recipe.
1.25 cups maida ½ teaspoon baking soda ½ cup butter ½ cup brown sugar ½ cup granulated sugar 1 egg 1 teaspoon vanilla extract 1 cup unsweetened shredded coconut
Whisk maida and baking soda. Set aside.
Mix butter and sugars with a hand blender or a mixer. Beat in the egg and vanilla extract.
Gradually mix the dry ingredients till you get a smooth batter. Stir in shredded coconut.
Take small portions of the dough and arrange them in a baking tray.
Bake for about ten minutes. Let the cookies cool, and then serve with tea or coffee.
