Poha is a beloved Indian breakfast dish made from flattened rice, tempered with mustard seeds, onions, and a variety of spices. It’s light, quick to prepare, and bursting with tangy, nutty, and aromatic flavours, perfect for mornings!
1½ cups poha 1 finely chopped onion 1 chopped green chilli ¼ cup peanuts 1 sprig curry leaves ½ tsp mustard seeds ¼ tsp turmeric powder 1 tbsp lemon juice 1 tbsp oil Salt to taste Fresh coriander for garnish
Wash poha in a colander under running water for 10-15 seconds, drain, and set aside to soften.
Dry roast peanuts until golden and crisp, then set aside.
Heat oil, add mustard seeds, curry leaves, green chilli, and onions; sauté until translucent.
Add turmeric, salt, and poha; stir gently and cook on low flame for 2-3 minutes.
Add peanuts, lemon juice, and coriander; toss gently and serve warm.
