Shahi tukda is a royal dessert prepared with fried bread, which is soaked in sugar syrup and topped with rich rabri. It is ideal for festivals and when you are looking for something indulgent but easy to make at home.
6 slices of bread 500 ml milk ½ cup sugar 2 tbsp ghee 4 tbsp condensed milk 6 strands saffron 1 tsp cardamom powder 6 almonds (chopped) 6 pistachios (chopped)
Heat 500 ml of milk with some condensed milk, saffron and cardamom powder. Simmer until it gets a thick consistency like a rabri.
Remove the crusts from the bread slices and cut them into triangles for that accurate shape of shahi tukda.
Shallow-fry bread with 2 tbsp of ghee until it turns crisp and golden on both sides.
Make the sugar syrup by using ½ cup sugar and ½ cup water, and boiling until it turns sticky but not too thick.
Dip the fried bread into the sugar syrup for about 15–20 seconds so that it absorbs the sweetness.
Place the sugar-soaked bread on a plate, pour a spoonful of rabri generously, and garnish with some chopped almonds and pistachios.
