Sattu Paratha is a hearty Punjabi flatbread stuffed with roasted gram flour, a winter favourite known for its warmth and nourishment. Crisp on the outside and flavourful within, it’s deeply satisfying and best enjoyed hot with white butter, curd, or a spicy pickle.
For the dough 2 cups whole wheat flour ½ tsp salt Water, as needed For the sattu filling 1 cup sattu (roasted gram flour) 1 finely chopped onion 1-2 finely chopped green chillies ½ tsp cumin seeds ½ tsp ajwain Salt to taste 1 tbsp mustard oil Lemon juice or chopped coriander (optional) For cooking Ghee or butter, as needed
Knead wheat flour with salt and water into a soft dough, rest for 15 minutes.
In a bowl, mix sattu, onion, green chillies, cumin seeds, ajwain, salt, and mustard oil. Add a little water if needed to bind lightly.
Divide the dough into balls, stuff each with the sattu mixture, and seal tightly.
Roll gently into thick parathas using dry flour.
Cook on a hot tawa with ghee until golden and crisp on both sides.
