Khoya adds slow-cooked richness to this khoya kheer, a dessert often prepared in Indian homes during winter. Full-fat milk lends creaminess, rice thickens naturally, while cardamom and nuts bring warmth, aroma, and comforting seasonal richness.
1 litre full-fat milk ½ cup crumbled khoya 2 tbsp soaked rice ½ cup sugar ½ tsp cardamom powder 2 tbsp chopped almonds & pistachios 1 tbsp raisins
Boil milk and simmer until slightly reduced, stirring to avoid it from sticking.
Add the soaked rice and cook slowly until it is soft and well blended.
Mix in khoya, then let it melt and thicken the kheer naturally.
Stir in sugar and cardamom powder, cooking till glossy and creamy.
Finish with nuts and raisins; serve warm or chilled.
