Classic Italian Soup Recipe For Cosy Winter Evenings

 Italian soup is the ideal comfort bowl for cold, chilly days. Loaded with vegetables, herbs, and a hint of parmesan, it brings together the essence of Italian kitchens in every spoon.

Ingredients

1 tbsp of olive oil 1 finely chopped onion 2 minced garlic cloves 1 diced carrot 1 cup chopped tomatoes 3 cups vegetable broth Half a cup of cooked pasta or beans Salt, pepper, and herbs to taste Grated parmesan for garnishing

Step 1

In a deep vessel or pot, heat 1 tablespoon of olive oil and add chopped onion to it. Sauté until it turns translucent for about 2–3 minutes.

Step 2

Now, add the minced garlic and diced carrot to this and mix it for another 2-3 minutes until it turns aromatic and a bit soft.

Step 3

Mix the chopped tomatoes and cook them until they turn soft and juicy. This will create a light base for the soup.

Step 4

Add in 3 cups of vegetable broth to this and let it boil for a few minutes.

Step 5

Add half a cup of cooked pasta or beans to add some thickness to the soup. Boil it again for 10 minutes.

Step 6

Spice up the soup by adding some salt, black pepper, oregano, and basil. Let the flavours mix and blend for about 2–3 minutes.

Step 7

Serve the sizzling hot cup of Italian soup garnished with parmesan and a drizzle of olive oil. Pair it with garlic bread to enjoy it fully.
