Butter melting into flour creates flaky layers that shatter gently with every bite, revealing tender cinnamon-spiced apples inside. This apple pie recipe balances sweetness and tartness perfectly without turning soggy.
For Pie Crust: 2½ cups all-purpose flour 1 cup cold unsalted butter (cubed) 2 tbsp sugar ½ tsp salt 6-7 tbsp ice water For Filling: 4 medium apples (700g, mix sweet + tart) ½ cup sugar 1 tsp cinnamon powder 1 tbsp lemon juice 2 tbsp cornflour 1 tbsp butter (small cubes)
Rub cold butter into the flour, sugar, and salt until pea-sized crumbs form, then add ice water gradually to bring the dough together and allow it to cool it for 30-45 minutes.
Toss sliced apples with sugar, cinnamon, lemon juice, and cornflour. Rest 10 minutes.
Roll half the dough into a pie dish. Add the apple mixture and dot with small butter cubes.
Cover with rolled dough, crimp edges tightly, and cut slits for steam release.
Bake at 180°C for 45-50 minutes until the crust turns deeply golden and the filling bubbles through the slits, then cool for at least 1 hour before slicing.
