Chur Chur Naan is a popular North Indian delicacy renowned for its flaky, crushed, and heavily stuffed texture. The dough is expertly layered and filled with a spiced mixture of potatoes and paneer, creating a flatbread that is crispy on the outside and soft on the inside. Baked or cooked on a tawa until golden brown, it offers a hearty dose of complex carbohydrates and protein when paired with a rich dal or chole.
1.5 cups whole wheat flour and 0.5 cups all-purpose flour 1 cup boiled and mashed potatoes 0.5 cup grated paneer (Indian cottage cheese) 1 teaspoon roasted cumin powder, 1 teaspoon amchur (dry mango powder), and salt to taste Ghee or butter for layering and cooking
Knead the flours with a little water and a pinch of salt into a soft dough, and let it rest for 20 minutes.
In a bowl, mix the mashed potatoes, paneer, cumin powder, amchur, and salt to create the filling.
Roll a portion of the dough into a small circle, smear with ghee, place a spoonful of filling in the center, and seal the edges to form a stuffed ball.
Gently roll out the stuffed dough into a thick flatbread and cook on a hot tawa (griddle) with ghee until crisp and deeply browned on both sides.
Remove from heat, gently crush (chur chur) the naan with your hands to expose the flaky layers, top with extra butter, and serve hot.
