Rum cake is a dessert that is synonymous with the Christmas season. A haven for people with a sweet tooth, this is your sign to make the festive special rum cake at home with this easy recipe.
2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup butter 2 cups sugar 4 eggs 1 teaspoon vanilla extract 1/2 cup milk 2 cups mixed candied peel 1 cup raisins 1 cup cherries 1 cup mixed nuts 1/2 cup brandy 1/2 cup dark rum
Take a bowl and mix candied peel, raisins, cherries, and nuts.
Pour brandy and rum and mix well. Let the fruit macerate for about 24 hours.
Whisk together flour, baking powder, and salt. Set aside.
Cream butter and sugar, and mix in eggs and vanilla extract.
Gradually add the dry ingredients and mix well. Gently fold in the fruit mixture.
Pour the batter into a pan and bake for an hour.
Let it cool, and then soak it in half a cup of rum. Finally, slice and serve.
