Masala oats are cooked with vegetables and spices to create a fibre-rich, filling meal that works well for breakfast, lunch or a light dinner. The soluble fibre in oats, combined with vegetables, helps promote satiety and steady energy levels.
1 cup rolled oats 2½ cups water 1 small onion, finely chopped ½ cup mixed vegetables (carrot, beans, peas) ½ tsp cumin seeds ½ tsp turmeric ½ tsp garam masala Salt to taste 1 tsp oil
Heat oil in a saucepan, add cumin seeds and let them crackle, then add the onion and sauté until soft.
Add vegetables, turmeric and salt, cooking for 2–3 minutes.
Stir in oats and water, bring to a gentle simmer and cook until the oats soften.
Finish with garam masala, adjust consistency and serve hot.
