The Paper Plane was created in 2007 by bartender Sam Ross at the Milk & Honey family of bars in New York. It was originally developed for a bourbon-focused menu and named after the M.I.A. song that was popular at the time. Built in equal parts, the drink became known for how precisely balanced it feels, with no single ingredient dominating. Today, it is considered a modern classic and is widely used as a reference point for contemporary cocktail design.

Ingredients

30 ml bourbon 30 ml Aperol 30 ml amaro (ideally Amaro Nonino) 30 ml fresh lemon juice Ice

Step 1

Add bourbon, Aperol, amaro and lemon juice to a shaker filled with ice.

Step 2

Shake well until fully chilled.

Step 3

Strain into a chilled coupe or cocktail glass.

Step 4

Serve immediately; traditionally ungarnished, with an optional paper plane clipped to the glass or placed beside the coaster.
