Kir Royale traces its origins to Burgundy in France, where the drink began as a simple mix of white wine and crème de cassis known as a Kir. It was popularised after the Second World War by Félix Kir, the mayor of Dijon, who served it at official receptions to promote local cassis and regional wine. The champagne version, later named Kir Royale, became associated with celebrations and formal gatherings, especially during the holiday season.
10 ml crème de cassis Chilled champagne or sparkling wine Fresh blackcurrant or lemon twist for garnish
Pour crème de cassis into a chilled champagne flute.
Top gently with champagne or sparkling wine.
Stir very lightly once to combine.
Garnish and serve immediately.
