Christmas 2025: Bebinca Recipe Made The Traditional Goan Way

Bebinca is a traditional Goan Christmas dessert made by cooking multiple thin layers of batter one at a time. The batter is rich with coconut milk and egg yolks, giving the dessert its characteristic flavour and texture. Each layer is set before the next is added, making the process slow and deliberate. Bebinca is sliced into small portions and served as part of the Christmas sweets spread.

Ingredients

1 cup all-purpose flour 1½ cups thick coconut milk 6 egg yolks 1 cup sugar ¼ tsp nutmeg powder Ghee for greasing and layering

Step 1

Whisk egg yolks and sugar until pale, then mix in coconut milk, flour and nutmeg.

Step 2

Pour a thin layer into a greased pan and cook until just set.

Step 3

Brush with ghee and repeat the process, layer by layer, until the batter is finished.

Step 4

Cool completely before slicing and serving.
