This chocolate truffle cake has a dense, moist texture and a deep cocoa flavour. It’s made with simple ingredients but delivers a luxurious finish, perfect for celebrations or after-dinner indulgence.
200 g dark chocolate (chopped) 150 g butter 1 cup sugar 3 eggs ½ cup all-purpose flour ¼ cup cocoa powder ½ tsp baking powder A pinch of salt 1 tsp vanilla extract 100 ml fresh cream (for truffle layer) 100 g dark chocolate (for ganache)
Melt dark chocolate with butter using a double boiler or microwave. Stir until smooth, then let it cool slightly.
In a large bowl, whisk eggs and sugar until pale. Add vanilla extract and the melted chocolate mixture.
Sift in flour, cocoa powder, salt, and baking powder. Mix gently until just combined.
Pour into a greased cake tin and bake at 170°C for 25–30 minutes or until a skewer inserted comes out with moist crumbs.
For the ganache, heat cream and pour it over chopped dark chocolate. Stir until glossy and smooth. Spread it over the cooled cake and chill before serving.
