Although fried rice is a Cantonese dish, the one which is consumed in India differs from the actual recipe. It is curated to suit the Indian palate. Plus, there are many types of fried rice–burnt garlic, chilli garlic, schezwan, jasmine fried rice and more. This recipe is a simple veg fried rice that you can make at home any time.
2-3 cups of basmati rice 2 medium sized onions, chopped 2 large carrots, chopped ½ cup of beans, chopped 250 grams of cabbage 40 grams of spring onions 3 tablespoons of soya sauce 2 tablespoons of vinegar Chilli sauce as per preference ½ teaspoon of ajinomoto or MSG Salt and pepper to taste
Use a non-stick frying pan or wok. Heat it up. Turn the flame to medium. Add oil
Let the oil heat up. Put in the onions, cabbage, beans, carrots, and spring onions. Saute.
Add two tablespoons of soya sauce, a cap of vinegar, preferred amount of chilli sauce, salt, pepper, msg. Mix.
Cook the rice. Layer rice on top. Stir-fry for 15-20 minutes.
Garnish with chopped spring onions. Remove from the pan and transfer to a plate. Serve with Chinese side dishes.
