This homemade chilli oil brings warmth, aroma and a deep, savoury heat to noodle bowls, soups, stir-fries and dumplings. Ingredients

½ cup neutral oil 2 tbsp chilli flakes 2–3 garlic cloves (crushed) 1 small piece ginger 1 tsp sesame seeds Salt

Step 1

Heat the oil with garlic, ginger and sesame seeds on low until they turn golden.

Step 2

Strain the hot oil to remove the aromatics.

Step 3

Pour the oil over chilli flakes and a pinch of salt in a heatproof bowl.

Step 4

Let it cool fully before transferring to a jar.
