This homemade chilli oil brings warmth, aroma and a deep, savoury heat to noodle bowls, soups, stir-fries and dumplings. Gently toasting the aromatics in the oil allows the flavours to infuse without burning, giving the final condiment a balanced flavour. As it rests, the heat deepens and the colour becomes richer. A spoonful is enough to transform simple meals into something special.
½ cup neutral oil 2 tbsp chilli flakes 2–3 garlic cloves (crushed) 1 small piece ginger 1 tsp sesame seeds Salt
Heat the oil with garlic, ginger and sesame seeds on low until they turn golden.
Strain the hot oil to remove the aromatics.
Pour the oil over chilli flakes and a pinch of salt in a heatproof bowl.
Let it cool fully before transferring to a jar.
