Fruit custard is a timeless dessert that pairs a smooth vanilla custard base with a vibrant medley of fresh seasonal fruits. It is simple to prepare ahead of time and serves cold, making it ideal for hot afternoons or family gatherings. Ingredients

500ml whole milk 2.5 tablespoons vanilla custard powder 3 tablespoons granulated sugar 1/2 cup apple, finely diced 1/2 cup banana, sliced into small rounds 1/2 cup seedless green or black grapes, halved 1/4 cup fresh pomegranate seeds

Step 1

Scoop 4 tablespoons of cold milk from the half-litre measure into a small bowl, add the custard powder, and whisk until completely smooth with no lumps.

Heat the remaining milk and sugar in a heavy-bottomed saucepan over medium heat, bringing it to a gentle simmer.

Step 3

Lower the heat and slowly pour the custard powder mixture into the warm milk, stirring continuously with a whisk to prevent lumps from forming.

Step 4

Cook for three to four minutes until the sauce thickens enough to coat the back of a spoon, then remove from heat, let it cool completely, and chill in the refrigerator for two hours before folding in the fresh fruits.
