Chickpea salad is a refreshing and protein-packed dish made with boiled chickpeas, vegetables, herbs, and a simple lemon dressing. It is ideal as a light lunch or side dish.
2 cups boiled chickpeas 1 cucumber (diced) 1 tomato (chopped) 1 onion (finely chopped) 2 tbsp fresh coriander leaves 1 green chilli (optional) 2 tbsp lemon juice 1 tbsp olive oil ½ tsp black pepper Salt to taste
Mix chickpeas with cucumber, tomato, onion, and coriander in a bowl.
Whisk lemon juice, olive oil, salt, and pepper for dressing.
Pour over salad, toss gently, and serve fresh.
