On a cold day, a warm bowl of chicken soup can be comforting. It is also prescribed on days that one is recovering from an illness because it gives the body, warmth, strength and nutrition.
1 cup chicken 1 medium onion 2-3 garlic cloves 1-inch piece of ginger 1 medium carrot 1 celery stalk 1 medium tomato 4 cups chicken stock or water 1/2 tsp black pepper powder 1/2 tsp turmeric powder 1 tsp oil or butter Salt
Heat oil or butter in a large pot. Sauté onions, garlic, and ginger until fragrant and translucent.
Add carrots, celery, and tomatoes. Cook for 3-4 minutes until slightly softened.
Add chicken pieces and cook until they change color, about 5 minutes.
Pour in chicken stock or water. Add turmeric, black pepper, and salt. Bring to a boil, then reduce the heat and simmer for 20-25 minutes until the chicken is tender.
Remove the chicken pieces, shred them, and return to the soup. Garnish with fresh coriander or parsley and serve hot with bread or crackers.
