Chicken Sandwich Recipe For A High-Protein Lunch Or Dinner

This chicken sandwich is built to be filling and protein-forward, using tender cooked chicken mixed with a simple spread and fresh crunch. It works well for quick lunches, easy dinners or even meal prep when you want something substantial without too much effort. The balance of protein, fat and texture keeps it satisfying. You can keep it classic or adjust the seasoning to taste.

Ingredients

250 g cooked chicken breast or thigh, shredded 2 tbsp mayonnaise or thick yoghurt 1 tsp mustard or pepper sauce Salt and freshly ground black pepper Lettuce leaves or sliced cucumber 4 slices whole wheat or white bread Butter or oil for toasting

Step 1

In a bowl, mix the shredded chicken with mayonnaise, mustard, salt and pepper until evenly coated.

Step 2

Lightly toast the bread with a little butter or oil until just golden.

Step 3

Layer lettuce or cucumber on the bread and spoon the chicken mixture generously on top.

Step 4

Close the sandwich, slice if needed and serve immediately with ketchup.
