During weekdays, you need a comforting and nutritious meal when you come home after a hard day at work. But many working professionals live away from home, so they have to cook for themselves. This recipe is exactly what you need to satisfy your hunger and go to bed with a full stomach.
For Chicken 1 tsp ginger-garlic paste 750 grams of chicken ½ tsp Kashmiri red chilli powder 1 tsp garam masala 2 tbsp lemon juice ⅛ tsp turmeric powder Whole Spices 2 star anise, bay leaves 2 cinnamon sticks, cloves 4 green cardamoms 2 black cardamom 1 nutmeg, mace ¾ tsp fennel powder
For Rice 2 cups basmati rice ¼ cup coriander leaves 3.5 cups water ½ cup mint leaves 1 tomato 2 tsp ginger-garlic paste 1 onion 3-4 tbsp ghee 2-3 green chillies
Marinate chicken with ginger-garlic paste, red chilli powder, turmeric, lemon juice, salt, and garam masala. Let it rest while you freshen up.
Keep the rice soaked and chop the vegetables, mint leaves, and coriander leaves.
Add whole spices to a pressure cooker and saute vegetables. Once onion slices have turned brown, add chicken and stir fry it on medium heat for 5 min.
Add remaining spices, water, and soaked rice. Cover the cooker for 5-6 minutes and cook the ingredients on medium heat.
Seal the lid after adding salt and keep the heat medium-high. Wait for 2-3 whistles to blow. Garnish the chicken rice with coriander leaves, and serve.
