Chicken Pish-Pash: A Soupy, Mushy Delight With Anglo-Indian Origin

With an Anglo-Indian origin, Chicken Pish-Pash is a one-pot comfort dish featuring a hotchpotch of mushy rice and chicken painted with veggies. Here’s the chicken pish-pash recipe to follow.

Ingredients

2 cups Gobindbhog rice 3 cups boneless chicken 10 peeled baby potatoes 3/4 cup baby carrots 3/4 cup French beans 3 bay leaves 1 cinnamon stick 3 green cardamom 1 tsp finely chopped ginger ½ tbsp black peppercorns 1 tsp black pepper powder 2 tbsp butter 1 tbsp oil Salt to taste

Step 1

Marinate the chicken with a little salt and black pepper powder.

Step 2

Soak rice for 15 minutes before draining the water.

Step 3

Heat oil over a high flame and sear the boneless chicken for 3-5 minutes.

Step 4

In a pan, heat oil and butter. Add bay leaves, black peppercorns, crushed cinnamon, cardamom, and cloves, and let them splutter.

Step 5

Next, add ginger, potatoes, carrots, and green beans, and sauté for 3 minutes.

Step 6

Add soaked rice, salt, and warm water. Allow them to cook for 15-20 minutes.

Step 7

Add seared chicken pieces and continue to cook till the rice turns mushy.

Step 8

Add some butter on top of the chicken pish-pash and serve it hot.
