Protein-packed, versatile and delicious—throwing together a chicken fried rice is a work of moments as well as a great way to use up leftovers from the fridge. Grill a chicken breast to slice or shred it from the remains of a roast, add any vegetables of choice and dinner is ready before you know it!
1 cup leftover rice 1 chicken breast, cubed 2 eggs, whisked ½ onion, finely chopped 1 tablespoon minced garlic 1 tablespoon minced ginger 1 tablespoon soy sauce ½ tablespoon chilli oil 2 teaspoons vinegar ¼ cup broccoli, blanched ½ cup spinach, chopped 2 spring onions, chopped 1 tablespoon vegetable oil
Heat the oil in a pan and sauté the minced ginger, garlic and chopped onions for 2-3 minutes over high heat.
Tip in the spinach and cook until wilted before adding the broccoli florets to mix thoroughly.
Add the cubed chicken and cook for 3-4 minutes before pouring in the soy sauce, chilli oil, vinegar.
Once combined, push to one side of the pan and heat some more oil to scramble the eggs in.
Mix the eggs with the vegetables and protein, toss in the rice and adjust seasoning if needed, with some salt.
Turn off the heat, sprinkle the chopped spring onions and serve hot with a side dish of choice.
