Thekua is a traditional sweet prepared during Chhath Puja, made with wheat flour, jaggery, and ghee. Offered as prasad to the Sun God, this crispy yet soft treat symbolises purity and devotion. It’s deeply rooted in the festive traditions of Bihar and eastern Uttar Pradesh.
2 cups whole wheat flour ¾ cup grated jaggery ¼ cup ghee ½ tsp cardamom powder Oil or ghee for frying
Dissolve jaggery in warm water to make a syrup, then cool slightly.
Mix wheat flour, cardamom, and ghee, and add the jaggery syrup to form a soft dough.
Shape into small discs or ovals, pressing light patterns with a fork or mould.
Deep-fry on low flame until golden brown, then cool before storing.
