Pumpkin rice, also called kaddu bhaat, is a festive sweet dish made with rice, jaggery, and pumpkin. Traditionally prepared as bhog for Chhath Puja, it carries a mellow sweetness and comforting aroma of ghee and cardamom, perfect for offering or serving as prasad.
1 cup rice (washed and soaked for 20 minutes) 1 cup grated pumpkin (kaddu) ½ cup grated jaggery 1 tbsp ghee ½ tsp cardamom powder 2 cups water
Heat ghee in a heavy pan, add grated pumpkin, and cook until it softens.
Add soaked rice and water, cover, and cook until the rice turns tender.
Stir in jaggery and cardamom powder, mixing gently until the jaggery melts and coats the grains.
Cook for a few more minutes until slightly thick, then serve warm as bhog or festive sweet rice.
