Given its versatility, quesadillas are a great vehicle to experiment with a variety of fillings and flavours—depending on the kind of tastes one craves. From spicy to savoury and even tart, the combinations make room for interesting snacktime trials.
1 large tortilla ¼ cup cheddar cheese, grated ¼ cup mozzarella cheese, grated 1 small tomato, chopped 3-4 tablespoons cooked beans 4-5 mushrooms, sliced 2 tablespoons shredded chicken (optional) 1 tablespoon chilli oil Butter, for toasting Guacamole, for dipping Salsa, for dipping
Melt the butter in a pan and place the tortilla over it to toast lightly.
Spread the grated cheeses on one half in layers before sprinkling the tomatoes, beans, mushrooms and chicken on it.
Drizzle the chilli oil on the empty half and fold it over before allowing it to sit for 4-5 minutes on one side, pressing gently using a spatula.
Flip it over and cook for another 3-4 minutes on the second side and transfer to a waiting plate.
Cut into four triangles and serve hot with guacamole and salsa on the side.
