Cheese chilli is the ultimate snack when you want something spicy, tangy, and unapologetically indulgent. It is essentially a fusion of crunchy capsicum, onions, and green chillies tossed in a glossy, soy-based sauce and finished with a generous layer of melting cheese. It hits the perfect balance between spicy heat and creamy richness, making it a crowd-pleaser for any casual get-together.
1 cup paneer cubes or mozzarella cheese cubes  1 large capsicum, chopped into squares  1 onion, cut into petals  2 green chillies, slit lengthwise  1 tbsp soy sauce, 1 tsp chilli sauce, and 1 tbsp cornflour mixed in water  2 tbsp grated processed cheese
Heat a tablespoon of oil in a pan and sauté the onions, capsicum, and green chillies on high heat for 2 minutes to keep them crunchy.
Add the soy sauce and chilli sauce, then pour in the cornflour mixture to create a thick, glossy glaze that coats the vegetables.
Toss in the paneer or cheese cubes and stir gently for 30 seconds until the sauce clings to them.
Transfer to a plate, immediately top with the grated processed cheese, and cover for 30 seconds so the heat from the dish melts it perfectly.
