Mangoes are the best part of the summer season. Apart from slicing the fruit, why don’t you utilise raw mangoes and try making regional recipes? Try this chatapati kache aam ki sabzi and serve with rotis.
1 raw mango 1/2 cup jaggery 1 tablespoon oil 1/2 teaspoon mustard seeds 1/4 teaspoon cumin seeds 1 pinch asafoetida 1/2 teaspoon turmeric powder 1 teaspoon red chilli powder 1/2 teaspoon coriander powder Salt to taste 1 cup water Coriander leaves for garnish
Peel and finely grate the raw mango.
Heat some oil and let mustard seeds and cumin seeds splutter.
Add hing, turmeric, red chilli powder, and coriander powder. Mix well.
Mix in grated mango and cook for 2-3 minutes. Add jaggery, salt, and water.
Let the sabzi simmer till the mango softens. Garnish with coriander and serve.
