Soft paneer cubes simmered in a light yoghurt-based gravy with cumin and mild spices create a fasting-friendly dish that feels rich yet balanced, with gentle flavours that don’t overpower but still feel festive.
200 g cubed paneer 1 cup whisked thick curd 1 tbsp ghee 1 tsp cumin seeds 1 chopped green chilli 1 tsp grated ginger 2 tbsp cashew paste ½ tsp black pepper powder ½ tsp rock salt ½ cup water 1 tbsp coriander leaves
Heat ghee, add cumin seeds and let them release aroma.
Add ginger and green chilli, sauté briefly without browning.
Lower the heat, add whisked curd and stir continuously to avoid splitting.
Mix in cashew paste, water and spices, cook till slightly thick.
Add paneer, simmer gently for a few minutes and finish with coriander.
