Sabudana vada is a Navratri favourite, vrat-friendly snack. Light but filling, sabudana vada is perfect for days when you are fasting and need something comforting, flavourful, and that keeps you filled for a long time.
1 cup sabudana (soaked) 2 medium boiled potatoes (mashed) ½ cup roasted peanuts (crushed) 2 green chillies (chopped) 1 tsp cumin seeds 2 tbsp coriander leaves (chopped) 1 tsp lemon juice Rock salt to taste (sendha namak) Oil for frying
Soak 1 cup sabudana overnight or for about 6 to 8 hours until they turn soft and non-sticky.
In a bowl, combine the drained sabudana with some mashed potatoes, crushed peanuts, green chillies, cumin seeds, coriander, lemon juice, and rock salt. Mash everything nicely to make a smooth mixture.
Take small portions of the mixture and shape them into medium-sized flat patties or vada.
In a deep pan, heat oil on medium flame. First, check the temperature by dropping a small portion of the mixture; if it rises slowly, the oil is ready to fry.
Now, gently slide each vada into hot oil and fry in small batches. Turn and fry from both sides until they appear golden brown and crisp on the outside.
Remove on a tissue paper and serve hot sabudana vadas with vrat chutney for a satisfying Navratri snack.
