Navratri is a festival that is marked with great devotion and energy. It also brings a wide range of delicious traditional foods. A special treat during this lucky time, Lauki ka halwa fits the simplicity of bottle gourd with the richness of milk and nuts to make a delicious dessert.

Step 1

Peel and grate the bottle gourd (lauki), and gather milk, ghee, sugar, cardamom powder, and chopped nuts like almonds and pistachios.

Step 2

Heat ghee in a pan, add grated bottle gourd, and sauté until it turns soft and translucent.  Pour in the milk and simmer the mixture on low heat, stirring occasionally, until the milk reduces and thickens.

Step 3

Stir in sugar and cardamom powder, allowing the mixture to cook until the sugar dissolves and the halwa thickens further. Sprinkle chopped nuts over the halwa, reserving some for garnish.

Step 4

Serve the warm Lauki ka halwa garnished with chopped nuts, with its comforting sweetness during Navratri festivities.
