Chaitra Navratri is right around the corner and one may require a no-grain menu and avoid certain foods to accommodate the rules of fasting. This millet idli is a great meal that you can enjoy during your fast. The best part? It is simple to prepare, healthy, and also filling.
1 cup samak rice (barnyard millet) 1/2 cup mixed vegetables (carrots, peas, beans) 1 tablespoon ghee or oil 1 teaspoon cumin seeds 1 green chilli, chopped (optional) 1/2 inch ginger, grated 1/4 teaspoon turmeric powder 1/2 teaspoon rock salt (sendha namak) 2 cups water Fresh coriander leaves for garnish
Rinse the samak rice, urad dal, and fenugreek seeds. Soak them for about 4-6 hours or overnight.
Drain the water and grind the soaked dal and fenugreek seeds using a little water as needed.
Grind the soaked samak rice to a slightly coarse texture. Add this to the bowl with the dal paste. Mix everything well to combine.
Add salt to the batter and mix well. Grease the idli plates with oil or ghee. Pour spoonfuls of the batter into each idli mould.
Steam the idlis in a steamer for about 10-12 minutes. Once done, remove the idli plates from the steamer and let them cool for a few minutes.
Serve the Samak Rice Idlis hot with sambar, coconut chutney, or any chutney of your choice.
