Originating from the concept of Indian Masala Chai (spiced tea), this slightly westernised version called Chai Latte is all about a hot cup of creamy, frothy, spicy comfort with every sip. To try this lower-caffeine alternative to coffee at home this winter, follow this Chai Latte Recipe.
–2 black tea bags 4 cinnamon sticks 1 teaspoon whole black peppercorns 5 cloves 4 green crushed cardamom pods 2 star anise 2½ cups milk 1 teaspoon sliced ginger 2 teaspoons maple syrup ½ teaspoon cinnamon powder
In a small pot, take the cinnamon sticks, peppercorns, cloves, cardamom pods, and star anise. Toast them over medium heat for 1 to 2 minutes.
Once the aroma starts coming, add the milk and ginger. Gently simmer them over a low heat for 5 minutes.
Next, turn off the heat and add the tea bags. Cover the pot and steep for 10 minutes.
Meanwhile, heat the milk in a saucepan until bubbles are visible around the edges. Remove from heat. Froth the milk using a milk frother.
Strain the tea through a fine-mesh strainer over a bowl, then remove the spices, tea bags, and ginger.
Stir some maple syrup into the tea. Pour the tea into mugs and top them with foamed milk. For garnishing, sprinkle cinnamon powder on top.
