World Coconut Day falls in early September, providing the perfect excuse to bake a light and airy coconut sponge cake. Blending desiccated coconut into the batter adds a delicate texture and rich tropical flavour that pairs beautifully with a hot cup of tea. Using standard pantry ingredients like plain flour, eggs, and butter ensures a straightforward baking process for any home cook. A light dusting of icing sugar or a simple glaze finishes this comforting afternoon treat perfectly.
1.5 cups plain flour  1 cup desiccated coconut  1 cup caster sugar  1/2 cup unsalted butter, softened  3 large eggs  1/2 cup thick coconut milk  1.5 teaspoons baking powder  1 teaspoon vanilla extract  A pinch of salt
Preheat the oven to 180C and line a round cake tin with baking parchment.
Cream the softened unsalted butter and caster sugar in a large mixing bowl until pale and completely fluffy.
Beat in the eggs one at a time, followed by the vanilla extract, ensuring each egg is fully incorporated before adding the next.
Fold in the plain flour, baking powder, salt, and desiccated coconut alternately with the thick coconut milk until a smooth batter forms.
Pour the batter into the prepared tin, smooth the top, and bake for thirty five minutes until a wooden skewer inserted in the centre comes out clean.
