A very popular dessert, stuffed orange ice cream is the embodiment of summer in a bowl, with the zest of an orange. Try this recipe as a match-day dessert.
2 medium-sized oranges 4 egg yolks ½ cup sugar 2 tbsp water ⅓ cup orange liquor 1 vanilla bean 1 cup whipping cream 2 tbsp sugar, separately set aside 1 tbsp of orange zest 6 oranges
Squeeze orange juice into a pot. Put it to a boil until it’s reduced to half. Let it cool.
In a mixing bowl, add the egg yolks, sugar, and water. Place it over hot water. Add the liquor and vanilla beans.
Whisk it. Use the double oil method to do so until it thickens. Remove and cool.
Whip the cream and zest in the bowl. Once thick, add the reduced juice and yolk mixture.
Pour into a mould of choice. Cover with plastic wrap. Freeze it for 4-5 hours.
Cut the top of one of the oranges. Remove the pulp. Repeat with all oranges until they look like bowls.
Fill with the frozen orange ice cream. Serve immediately!
