Cashew pulao is a lightly spiced rice dish made with basmati rice, whole spices, and roasted cashews. It is aromatic, mildly rich, and often served with raita or a simple curry.
1 cup basmati rice (soaked for 30 minutes) 2 tbsp ghee or oil 1 bay leaf 3–4 cloves 2 cardamoms 1 cinnamon stick 1 onion (sliced) 12–15 cashews 1 green chilli (slit) 1 tsp ginger garlic paste 2 cups water Salt to taste Fresh coriander for garnish
Heat ghee in a pan, add whole spices and let them splutter.
Add sliced onions and sauté until light golden, then add cashews and roast till slightly browned.
Add ginger garlic paste and green chilli, sauté for a minute.
Add soaked rice, salt, and water. Cover and cook until rice is fluffy and cashews are well combined.
Garnish with coriander and serve hot with raita.
