This contemporary plant-based milk offers a gorgeous, sun-kissed alternative to traditional dairy, drawing its velvety body and brilliant hue from wholesome garden carrots. Lightly steamed carrots are blended smoothly with soaked almonds and creamy oats to create a rich, nutrient-dense beverage that is naturally packed with beta-carotene and essential vitamins. Enhanced with a subtle kiss of green cardamom and a drizzle of honey, it functions beautifully as a clean-burning morning fuel or a comforting evening drink.

Ingredients

1 medium carrot, peeled and chopped into rounds 10 whole almonds, soaked overnight and peeled 2 tbsp rolled oats (for added creaminess) 2 cups water (for blending) 1/4 tsp green cardamom powder 1 tsp raw honey or maple syrup to sweeten

Step 1

Steam the chopped carrot rounds for about 5 to 7 minutes until they are completely tender when pierced with a fork, then let them cool down to room temperature.

Step 2

Transfer the cooled steamed carrots, peeled soaked almonds, and rolled oats into a high-speed blender container along with 2 cups of clean water.

Step 3

Blend the ingredients on high speed for 2 full minutes until the mixture turns into an exceptionally smooth, uniform, creamy orange fluid.

Step 4

Strain the mixture through a fine mesh sieve or nut milk bag into a jar, stir in the green cardamom powder and raw honey, and chill thoroughly before serving.
