Caramel chai is made by caramelising sugar before brewing the tea. This step deepens flavour and adds slight bitterness that balances milk and spices. The result is darker, fuller chai with a toasted note.

Ingredients

2 tbsp sugar 1 cup water 2 tsp loose tea leaves 1 cup milk 2 cardamom pods, crushed 1 small piece ginger

Step 1

Heat sugar until it melts and turns amber.

Step 2

Add water carefully and stir until dissolved.

Step 3

Add tea, ginger and cardamom, boil briefly.

Step 4
