Pink sauce pasta brings together the tanginess of tomato sauce and the richness of white sauce without letting either dominate. It is a popular choice because it stays mild, creamy, and crowd-friendly, especially for people who find red sauce too sharp or white sauce too heavy. Cooking the base properly before combining the sauces is what gives this pasta its smooth, balanced finish.
200 g pasta (penne or fusilli) 2 tbsp butter 1 tbsp olive oil 1 small onion, finely chopped 2 cloves garlic, chopped 2 tbsp all-purpose flour ½ cup milk 1 cup tomato purée ½ cup fresh cream Salt and black pepper to taste Chilli flakes and dried herbs
Boil pasta in salted water until al dente and reserve some pasta water.
Heat butter and oil, sauté onion and garlic until soft.
Add flour, cook briefly, then whisk in milk to form a smooth white sauce.
Stir in tomato purée and cook until glossy, then add cream and seasoning.
Toss pasta with sauce, adjust consistency with pasta water, and serve hot with garlic bread or salad.
