Think creamy potatoes, gentle spices, and perfectly crisp bread; this sandwich nails it. Every bite balances softness and crunch, making it perfect for lazy lunches, quick snacks, or late-evening cravings without feeling boring.
2 medium boiled potatoes 1 tablespoon oil 1 finely chopped onion 1 finely chopped green chilli ½ teaspoon cumin seeds ½ teaspoon red chilli powder ¼ teaspoon turmeric powder Salt to taste 1 tablespoon chopped coriander 4 bread slices Butter as required
Heat oil in a pan, add cumin seeds, and let them crackle gently to release their aroma before adding chopped onions and green chilli.
Sauté until onions turn soft and lightly golden, then add mashed boiled potatoes and mix patiently for an even texture.
Sprinkle turmeric, red chilli powder, and salt, stirring slowly so the spices coat the potatoes without burning.
Finish with fresh coriander, switch off the heat, and let the filling rest for a minute to deepen flavours.
Spread butter on bread slices, add the potato mixture, close, toast on a pan until crisp, and serve hot.
