Lightly toasted buns turn crisp outside and soft inside while soaking up the melting cardamom sugar butter. This nostalgic snack traces back to old Irani cafés, where bun maska became a comfort staple served with piping hot cutting chai.
2 buns 3 tbsp softened butter 1 tsp powdered sugar ¼ tsp cardamom powder Pinch of salt
Whip butter with sugar, cardamom, and a pinch of salt until light.
Slice the bun horizontally, keeping the hinge intact.
Toast the insides on a hot tawa until lightly crisp.
Spread a generous layer of the flavoured butter.
Press the bun lightly so the butter melts, and serve warm with chai.
