Bruschetta is the ultimate celebration of high-quality, fresh ingredients. The success of this dish lies in the balance between the crisp, toasted bread and the vibrant, acidic tomato topping. By rubbing the toasted bread with a fresh garlic clove, you infuse it with a subtle, aromatic flavour that perfectly complements the sweetness of vine-ripened tomatoes and the herbal notes of fresh basil, finished with a touch of parmesan or mozzarella.
4 thick slices of sourdough or baguette bread  2 large ripe tomatoes, diced  1 clove garlic, peeled  1 tbsp extra virgin olive oil  A handful of fresh basil leaves, torn, sea salt, and shaved parmesan or mozzarella
Toast the bread slices on a grill or in a toaster until they are golden brown and crisp on the edges.
Immediately rub the surface of the hot toast with the cut end of the garlic clove to release the flavour.
In a bowl, toss the diced tomatoes with the olive oil, salt, and basil until well combined.
Spoon the tomato mixture generously over the toasted bread, top with fresh cheese, and serve immediately before the bread loses its crunch.
