Broccoli paratha is a softer, greener version of the classic stuffed paratha, filled with lightly spiced grated broccoli. The filling is sautéed just enough to remove moisture while keeping the vegetable’s natural flavour intact. Serve with curd, pickle or a simple dal.

Ingredients

2 cups whole wheat flour 1 cup grated broccoli 1 green chilli (finely chopped) ½ tsp cumin seeds or cumin powder 1 tsp ginger (grated) Salt, oil and warm water

Step 1

Knead wheat flour with salt, a little oil and warm water into a smooth, soft dough.

Step 2

Heat a teaspoon of oil, sauté cumin, ginger, green chilli and grated broccoli until the mix turns dry and fragrant.

Step 3

Roll out small dough balls, place a spoonful of broccoli filling in the centre, seal and flatten.

Step 4

Cook on a hot tawa with light oil until both sides develop golden brown spots.
